Chicken Salad, Hold the Mayo One deli rotisserie chicken or any cooked chicken you can find
lemon juice
chopped celery
chopped green onions
1/2 container of cream cheese and chive spread
light sour cream
Chop the chicken or use food processor to chop
Toss chicken with about a tsp of lemon juice and add salt and pepper to taste
I use about two stalks of celery and 4 green onions. Add to chicken.
Blend the cream cheese with enough light sour cream (maybe 2/3 to 3/4 c) to make it the consistency of mayo. Add this to the chicken mixture and chill.
Easy Pasta Salad 1 package of tri-color rottini pasta, cooked, drained and rinsed
chopped veggies--celery, carrots, green peppers, sweet onion if desired--I don't use onion), small chunks of zucchini or any other raw veggie you like
cubed cheddar or a small package of crumbled Gorgonzola cheese (Optional, If you like cheese. You will get a very different flavor depending on the cheese you choose.)
Salt and pepper or seasoned salt to taste
1 bottle of Brianna's French vinaigrette dressing. Use whole bottle.
Mix everything in large bowl, cover and chill. Stir several times before you plan to serve, adding salt if needed.
Stained Glass Fruit
I can of peach pie filling (Name brand far better than store brand on this one)
I small can of manadarin oranges, drained
I large can of pineapple chunks in their own juice, drained
I container of sweetened frozen strawberries, thawed and not drained
2-3 bananas
Mix first four ingredients and put in your prettiest glass bowl. Just before serving slice bananas and mix in. This looks gorgeous and is easy and yummy.
The first two recipes are my own creation, the last came from some friend a long time ago.

Must be hot in Houston. It's actually not raining today in Boston, a recent rarity. I suppose you'll be sending that heat and humidity our way. As for me, I'll take sunny 70s and no rain. Jeanne
